Easy Gluten Free Dinner Recipes
Chicken Stuffed Bell Peppers (discovered on page 147)
Cooking Time 38 min
4 moderate red (orange yellow or green) bell peppers cut in half and seeds removed
2 teaspoon. olive oil
1 medium onion chopped
2 cloves garlic finely chopped
1 1/2 pound raw chicken breast, boneless, skinless, chopped into 3/4 inch pieces
1 teaspoon. ground chili powder
1 tsp ground cumin
1/4 tsp sea salt (or Himalayan salt)
1/4 tsp ground black pepper
2 cups cooked quinoa
5 tbsp chopped fresh cilantro (reserve some for garnish)
1 tablespoon fresh lime juice
1 cup shredded Monterey Jack cheese
Hot pepper sauce (to taste – discretionary)
Heat oil in large frying pan over medium heat, add onions, cook stirring frequently for 4-5 minutes or until onions is see-through. Add garlic and keep to cook stirring frequently for 1 minute. Add your chicken breast, chili powder, cumin salt and pepper cook stirring often for 5 minutes or until chicken is no longer pink. Add legumes Tomato Sauce quinoa, corn cilantro and lime juice. Reduce heat to medium-low and cook stirring for 3-5 minutes or until heated through.
Top each pepper with cheese and remove foil, bake for an additional 3 minutes or until cheese is melted. Serve scattered with fresh cilantro and hot sauce (if desired)
I always like to propose that busy families to double or triple up on a recipe that the family likes and freeze the extra recipe (or 2) for a later date. This will make preparing meals that are later even quicker as no prep work – simply warm and serve.

Eggplant Turkey Burger (found on page 151)
Serves 4 Prep time 20 minutes Cooking Time 16 minute
12oz raw ground lean turkey breast
3/4 of a moderate onion chopped and 1/2 sliced
2 large egg whites (1/4 cup)
1 Tbsp finely chopped fresh parsley
1 tsp hot pepper sauce (such as Tabasco)
1 medium bell pepper sliced (or chopped)
1 teaspoon olive oil
4 sliced Muenster cheese (about 4 ounce
1 Tablespoon balsamic vinegar
Preheat broiler or grill to high. Combine turkey, chopped egg whites, onions, parsley and hot sauce in a medium bowl, mix well and form into 4 patties. Broil or Grill patties for about 4 to 5 minutes on each side or until no longer pink in the middle. Set aside and keep warm. Place a piece of eggplant on each of four serving plates. Top each with a patty, a piece of onion, a slice of bell pepper as well as a slice of cheese. Sprinkle with vinegar and top with another piece of eggplant.
Making several mountains of the patties and freezing them for later is an excellent approach to make this even more time efficient.
